Mashed potato croquettes with smoked tomato and red pepper puree, smoked pork belly, and micro greens salad with lemon vinaigrette.

Fries:
Hand cut Russets (or use a fry smasher)
Triple rinse
1/3 cup salt + 1/3 cup cup white wine vinegar
5 gallon bucket with cold water.
Rest overnight.
Blanch in a fryer at 300F, 1 minute down, 1 up, 1 down, 1 up, 1 down, on a sheet tray
Finish with 350F fryer until GBaD.
Salt/Pepper or any other seasoning mix.
Done. Serve with mayo. Ok, fine, ketchup. Both. Whatever.
