Whats your favorite fried food?

Theres two fried chickens on the poll fyi.
Have never had anything so consistently good out of a deep fryer other than chicken.

Korean Fried Chicken. Soooooo goood.

Mashed potato croquettes with smoked tomato and red pepper puree, smoked pork belly, and micro greens salad with lemon vinaigrette.

Fries:

Hand cut Russets (or use a fry smasher)
Triple rinse
1/3 cup salt + 1/3 cup cup white wine vinegar
5 gallon bucket with cold water.
Rest overnight.
Blanch in a fryer at 300F, 1 minute down, 1 up, 1 down, 1 up, 1 down, on a sheet tray
Finish with 350F fryer until GBaD.
Salt/Pepper or any other seasoning mix.

Done. Serve with mayo. Ok, fine, ketchup. Both. Whatever.
