What is the ultimate cookie in your opinion?

Ah man. I want a cookie now and I can't have them due to low carb diet. I have 2 weeks before I'll have a day off from it and now I'll be thinking about cookies the entire time.

If only it worked that way. If I eat more than about 50-60g carbs in a day (much less in a single delicious moment) it takes me about 2 days to return to a ketogenic state. I've been doing this over a year and I've learned pretty well how my body works in these things. I lose between 5 and 10 pounds a month depending on how active I am (5 sitting on my butt all month, 10 when I get to the range every weekend and get in a round of golf)

I make my own cookies. I follow this recipe for some soft, warm and gooey double chocolate chip cookies.

Big yummy double choc chip cookies

110g butter
200g soft light brown sugar
1 egg
seeds of 1 vanilla pod or 2 drops of vanilla extract
165g plain flour
pinch of salt
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
30g cocoa powder
100g milk chocolate chips
100g dark chocolate chips

Preheat oven to Gas Mark 5/190°C and line your baking trays.

Put the butter and sugar in a bowl and cream together until combined. Add in the egg and vanilla and mix well. It might look like the mixture has curdled but just give it a good mix and it will come good.

Add the flour, salt, baking powder, bicarbonate of soda and cocoa powder and mix until the dough comes together. (It will be quite stiff)

Add the chocolate chips and mash everything together with a wooden spoon.

Divide the mixture into balls and space evenly on your trays. Bake in the oven for between 10-12 minutes.

Remove from the oven and leave to cool on the tray, they will be very soft but will harden up.

I had my oven set to Gas Mark 4 as it can be a little temperamental sometimes, and this way I know I won't overcook them too quickly. I found my cookies needed between 9-10 minutes and came out with a great crispy edge and soft center.
