So I know based on the storyline for whatever movie/book/story they're in demons will either have genders or not. But what about in mythology? Do they really have genders or is that just our way of understanding them?

Kom graun, oso na graun op. Kom folau, oso na gyon op.
Well Succubi were depicted as female, as they'd lay with you to birth half human, half demon babies. Same goes for Incubi as males. Those are two examples.
* do you want to have a bad time?
Hmmm, now here's a question I can get behind.
I would say no, they are evil spirits who aren't related to man and so when they take on a gender it's solely to relate to us in some way.

[...] we have an intolerance for ideas and evidence that don’t fit a certain ideology. I’m also not saying that we should restrict people to certain gender roles; I’m advocating for quite the opposite: treat people as individuals, not as just another member of their group (tribalism)..
Some do. Some don't. Depends on what kind of universe you're looking to write in.
On some great and glorious day the plain folks of the land will reach their heart's desire at last, and the White House will be adorned by a downright moron.

Last I checked, succubi WERE incubi... They would sleep with a man as a succubus, store the result, then seduce/rape a woman as an incubus and use the material they had acquired from the first encounter to impregnate the woman.
in the arbahamic faiths, they should have. since they're just the followers of satan that was expelled with him.
succubi and inccubi. in some mythology the succubi changes into the inccubi to plant the seed she steals from the woman.
other mythologies, it just depends.
Yeah they do, just depends on who writes them, demons are fictional characters so can be either or none, depending on the author.

There is no singular mythology for demons.
What we refer to as "demons" are either generally nondescript monsters or amalgamations of "evil" spirits and beings from a dozen or more different origins.
Depends on whose demons they are. Shocking isn't it.
Succubus are female.
Incubus are the male versions of the temptress...
