So what hapens to a mage when raised as a dk ? They can't arcane after that they"changed ? Or a shaman the elements. Rogues forget how to assasinate ? How does this works in lore ?

Lore wise I would imagine they wouldn't be raised as DKs, the Lich King had other types of servants, undead mages and assassins, it's likely that other classes, if raised by the scourge to be more than 'mindless' undead, where raised as a type that best fit their prowess, they just aren't playable classes.

So fallen paladins and warriors who caught the eye of the Lich King or other powerful scourge would be made into Death Knights and other classes would be raised as something else, if deemed worthy.
