All restaurants are doing this. If anyone hears of ICE in the area every responsible manager who gives a shit about being able to open the next night will send the entire kitchen staff home regardless of their immigration status. It's simply not worth having your prep cook and sous chef who are both here with documentation locked up for a few weeks because the dishwasher you have is an undocumented guy from guatemala who does the job 5x better/faster than the last guy while also being the only one who would work for that pay.

it's honestly pretty hard to go to any metro area in general and find many restaurants without undocumented staff, and not just from central/southern america. hell, you find undocumented kitchen staff in plenty of smaller cities and towns all over the country, too.
a lot of folks don't realize just how much of our service industry is built on a ton of hard working, underpaid folks here without documentation.
Yup. My first job at 15 was a dishwasher in an Italian restaurant in 1988. A few months after I started, we suddenly had 5 or 6 guys from Yugoslavia working in the restaurant. They worked their asses off. The owner also owned a house in town with 6 apartments in it, and it put them up in one of the apartments. Looking back, I'm sure he was paying them shit wages, and them taking a good chunk of it back in rent from them. I don't mean to stereotype, but the owner could've been Tony Soprano's shorter brother.
