Even at my absolute drunkest, I would not date/bang one of my mom's friends. They're all well into their 50's and look like they're well into their 80's.

No, they don't attract me at all.
There are the exceptions, those so called hot milfs (they really damn rare to be honest), but that's all.
Also, i don't think i'd take the initiative in those cases (i really don't care much for older women), but if she's still hot and hit me, i'd give it a go.

Technically my wife's almost a year older than me.

Do I? Not so much these days. People think I'm marrying a 14 year old and must go for much younger women. It is more the case that by the time they are older than me, they're married or otherwise not on the market.
With COVID-19 making its impact on our lives, I have decided that I shall hang in there for my remaining days, skip some meals, try to get children to experiment with making henna patterns on their skin, and plant some trees. You know -- live, fast, dye young, and leave a pretty copse. I feel like I may not have that quite right.

I did when I was in my late teens/early 20s and learned a lot. It wasn't dating per se, but it was very educational and very fun.
