Salmon steak with a salad (cucumber, cherry tomato, and mozzarella in olive oil and balsamic vinegar).
Was a few nights ago, but
My famous (in my circles) spaghetti. Tomato puree + canned tomatoes or chopped tomatoes, OR pre-made sauce if you're lazy. Pile of herbs, salt, pepper, red pepper. This gets added to the sauteed onions/garlic/mushrooms, then finally add meatballs at the end to simmer while the pasta boils. Can alternatively use ground meat if you want a meat sauce.
Top with REAL parm cheese, don't be lazy and use the canned stuff like me- but it worked fine at the time.
The bread is toast with irish butter with the same herbs I used above + garlic.
Smoked brisket, with my own rub and homemade BBQ sauce with coleslaw and fries on the side for dinner tonight!
