Hello all,
I have a 2x 250 raid 1 setup, but need more space.
If i buy 2x 500gb storage, can i setup a raid 1 for 750gb storage? I'm trying not to lose out on my 2x 250 ssds.

As far as I know (Obligatory disclaimer), RAID1 needs same drive capacity to work. having a 2 drive 250gb array and adding a 2 drive 500gb array would mean that the 2nd array would get nerfed to 250gb.
You could add it as a secondary array so you have a 250gb array and a 500gb array showing up as 2 independant drives instead of trying to make it into one.
Mind if I ask why you're running RAID1? Doing work on your computer, or?
