Lana is a fantastic character and the one that stands out in my head. Glad they gave her an updated model after Ramen hair Benniko early on.
I hated Ahsoka at first, but she really grew on me in Rebels.

Ahsoka Tano. To think that she was so fucking annoying in the beginning to how well her arc came to a close in Rebels, no one else can compare.
Runners up are Ventress (I have a soft spot for the Nightsisters in general, including Merrin) and Iden Versio.
Princess Leia
She could be the nicest person in the world, still doesn't negate the fact the Rey is a non-character with no depth that gets everything handed to her and people pretend a few seconds in peril while being guarded by the guy who wants to be her bff is proof that not everything is.
Mara Jade isn’t canon neither are a few others here.
Milli Vanilli, Bigger than Elvis
Ahsoka. I'll be honest and say the character annoyed the hell out of me at first as I felt they were trying to make her too perfect from the start, but as the Clone Wars went on and they fleshed her out more and more, she became much more well-rounded and likeable.
Second is probably Leia, the OG badass woman in Star Wars: she took charge of her own rescue in ANH, was willing to stay behind until all transport ships had safely evacuated in ESB even as Imperials stormed the base, brazenly walking into Jabba's lair to rescue Han with a live thermal detonator, and then choked Jabba to death with the fucking chain he used to keep her captive... Leia was a fighter from the beginning, but all anyone ever seems to remember are the cinnamon bun hairdo and the gold bikini.
