Vanilla and everything post MoP is shitty in comparison.
Honestly the removal of dot snappshotting in WoD killed the fun for DoT classes in my opinion. A lot of people disagree but that's just how I felt about it.

Late Cata for Arms War and Firelands Moonkin.
As a Lock who has always been in favour of Demonology and Destruction: MoP by far.
I do like the BfA iteration (Demo), but the overall gameplay (game) feels tedious right now.

Combat Rogue was insanely fun in tbc. I've always mained Rogue, but Blizzard murdered combat in Legion where they made the Spec a shitty buccaneer spec
For me Feral was the most fun in MoP with the Rune Trinket. My 2nd favorite spec of the time SV hunter felt rewarding. I might main be a melee main but I'm never touching a melee hunter-I miss ranged SV.
My prot paladin: Wrath, with Legion a close second. I absolutely hated holy power as prot, though I liked the heal it came with.
Demon lock: Pandaria. Once demon hunters were introduced, warlock just hasn't been fun for me (he's stuck at 101).
Monk: Pandaria, with Draenor second. Trying to level up a new monk for allied races, and being forced to switch over to dps spec for the daily experience boost quest just annoyed the shit out of me.
Priest: I haven't touched her since I got her to 85 in Cataclysm, doing a few raids as holy. So I guess Cata for that.
Druid: That's a tough one. The constant massive changes to balance just annoyed me so much. I got my worgen druid to 100 in Draenor, got her the sythe, and I think she's 102? I honestly can't say a specific expansion. I miss tree form healing in Wrath, though.
Rogue: Cataclysm sub rogue. So much fun leveling her up. Then they changed it up, so I switched to Combat in Legion. The legendary for combat was nice, but meh. Not as fun as Sub in Cata.
Warrior: Honestly not a very fun class for me. Wish I could have experienced gladiator stance.
Mage: Never really had much fun with this one. I suck at mage. I guess arcane wasn't too bad in Pandaria.
Other classes I don't really like.
It's pretty funny seeing MoP voted the best, that was the expansion many many people hailed a failure before it even launched cause of the PANDAS which I thought was a pretty awful excuse as til this day I've never made a panda... Optional races don't bother me at all.
And now to look how fondly people remember MoP is pretty hilarious.
I loved patch 5.2 for my Human WW monk made the class so amazing its a shame it doesn't play as well now. Loved the healing orbs too it was so unique compared to this now lame and same as every class cast heal.
I enjoyed MoP as an expansion and it was great for Blood DK. Not very engaging for Frost (stack mastery, spam howling blast), unholy nowhere to be seen after RPPM killed festerblight.
For me it's;
Blood DK: MoP
Unholy: WoD - Multistrike makes everything better
Frost: WoD
With shoutouts to Cata(>=firelands)/MoP Enhancement Shaman & WotLK Ret (who didn't love stacking agility and just mashing buttons)
As a long time Ret, I greatly enjoyed Late MoP with 40-50% Haste, pushing CS off your rotation entirely. Felt incredibly fluid, just a shame Wrath from Symbiosis didn't give a HP on cast, otherwise you could've made Rangadin a thing with Harsh Words glyph. Wouldn't have been as good, but I remember the damage being nearly there (Like 60k/1s cast, 80k Harsh Words) just none of the components had synergy.
I also enjoyed FV/EDS and ES/EDS with T17 in WoD. Having to make split second decisions about what proc you want to use, keep track of 4 in total (2s, 4s, EDS and AoW) and maintain all the buffs (Inq baseline and seal twisting if you opted for that).
Hated Legion Ret, Colossus Smash of Judgement was just horrendous, especially as it tied our Mastery to it in a weaker way than Arms.
While Ret is relatively enjoyable now, especially with better haste thresholds (And it's shit that crit with Expurgation pulls ahead most of the time), Judgement is still wonky but going ES and Inq can give you some juicy burst that brings back the Wrath/Cata feel of Ret.
Cata Ret pre-DS was dire. They changed the mastery entirely at the start as our mastery was originally Divine Purpose at the time. I sadly never played Ret in Wrath, though I did play Ret in Vanilla (Ah, to be young and ignorant again) and BC, before being "asked" to go Mage.
MoP is the god tier of class design

MoP for me, I loved playing my monk as a tank and healer, my disc priest, my warlock... the only expansion I played without any breaks. Easy to have alts as well.
For me, MoP Restodruid and Legion Affliction warlock were the most enjoyable to play.
As a Ret Paladin, I'll definitely say either WoTLK, or Legion.
