So i just now did a Raidbot sim between a 445 Razor coral and a 430 Conductive inc and they both came out at roughly the same dmg.
So i'm just generally wondering, Why is Razor coral seen as such a good trinket?

Razor Coral also gives you a shitload of crit on demand.
Because the direct damage the trinket does isn't the sum-total of its value?
From the screenshot you sent, it looks like you simmed them together, which is not the right way to compare them. Either use the simC addon to use Top Gear and select three trinkets to sim between, or manually build different gearsets in the Gear Compare screen. The goal is to sim <other trinket> + coral vs <other trinket> + inkpod, not coral + inkpod.

Want to store it all up to pop with a Inkpod at 30% boss health, sure big crit Inkpod hit.
Wanna store it every 2 minutes to pop with a Breath of Sindragosa, sure big Breath burst.
Wanna store it every 45 seconds for Pillar of Frost, sure but it will be a tiny crit buff because of how short a time its had to stack.
Wanna store it every 8 minutes for Army of the Dead, sure enjoy 100% crit army.
The reason its good is because it can line up with everything, and you choose when you want the trinket effect.
The only place where its bad, is when a boss disappears or becomes immune for a period of time, preventing you from adding stacks to the future crit buff, or sometimes removing them before you've had a chance to use them.
Razor Coral TL;DR:
1st button press, weak damage, starts stacking debuff while you attack target.
2nd button press, eat your debuff for a crit buff per debuff stack, more stacks more crit.
Choose when you want your crit buff.
