I think the bottom line is wish fulfilment. Elves are attractive, humans are writing the stories, humans are reading the stories.
Same reason there are lots of stories about humans and vampires in relationships.

The WoW lore specific explanation is pretty fucking simple.
Time+geographical proximity+looking alike.
Humans and Elves, specifically High Elves have been living in close geographical proximity for about 3000 years, during which there have been substantial political, military and cultural interaction to the point of sharing a religion etc. And humans and High Elves look sufficiently alike that they could be just really ethnic varieties of the same race.
Keep in mind that Dalaran always held a fairly large Elven presence too.
Furthermore these interactions and relationships are more prevalent on the upper ends of both societies, princes, mages, generals because the upper echelons of both societies were more likely to interact, study together, do political stuff, go on military campaigns etc. than a farmer from Silvermoon and farmer from Westfall.
The real life out of lore explanation. It's a literary trope.

Unlike her sisters, she didn't dominate her husband and now she is totally dependent on children. Of course, good mother should focus her life on her kids but that's not what independent women do.

Why not troll-orc first?
Because who wants to be in a relationship with the same person for over 10k years? Plus when you are 5k years old humans will think you still look hot while elves will smell your mana and know it has gone rancid.
As others pointed out, it's a fetish thing. But it's also mixed with a writer's ignorance. Elves in Warcraft were originally like elves in D&D where it takes a very, very long time to form a bond. So much so that human/elf relationships were RARE. Alleria/Tur thing as an example of how it used to be, Tur was even upset that she treated him coldly.
In Warcraft now, you have all these mixed relationships that just came out of nowhere. That's because the people writing the story(especially that woman who wrote about Sylvanas/Nathanos whatever her name is) don't know how elves work. They treat them like humans with pointy ears when they never were.
This is also a thing in Dungeons & Dragons where players who play "elves" are bad roleplayers and play them like humans.
It's a lack of quality, in other words. The lore in WoW has been far from amazing though recently.
