Hello, will I be able to pick upp JC and LW as professions for SL without having to do previous expansions when it comes to skilling?

Yes.

Professions are now basically self-contained - each expansion's professions have their own skill levels, so you can be e.g. 75/75 Outland Jewelcrafting and be 0/75 in everything else - and so on. You will not need any skill in any of the old ones to do the SL ones.
