They have an idle flapping animation, so I assume they have a running wild flight form that can be used in old content.

Dont be mistaken by that too much. While we can seemingly dragonride with our wings, it also uses the flight mid combat.

You can guess at least the left and right ones.

The left one is probably Warrior. Fire-theme tends to go with Warrior - very unlikely for DK, I know you're saying all four could be DK - strongly disagree - probably the big ice one is DK. The right one is definitely Demon Hunter - there's no-one else it could be. The middle two? Harder to say. Cloth and Mail looks like.

Here you can see very clearly they fly on demand in combat.

Hence also the idle animation when youre not casting during that.

I bet its a CD "Flap for 15 seconds for increased damage" or yadda yadda.

No. The healer spec is gonna use both green and bronze magic.

Pretty much what I thought. I think it's fairly clear what's what. That set being the evoker one makes sense because it reminds me of that one plate set from... Dragon Soul?

Honestly if thats truly the Evoker Tier Set I am not playing anything else and just basking in its glorious Deathwing-esque glory.
