They write the story they want, i can't blame them for that. Personnally i would like for the Drachtyr to be gnomes as alternate form. But i can totally understand their decision of restriction class+race combo. Sometimes when you write/create something the initial "cool" factor is the only thing you think of and you create lore/gampleay to reflect that cool factor.

Honestly in terms of the entire reveal the only downside to me is the race and class but it’s not saying that it’s still not bad. Doesn't surprise me that the Watcher is important and named at all. They put a lot of energy into rendering him and giving him a 5 minute arc.

Oh right from Wandering Isle. Horde/Alliance trainer trained new Pandaren in old classes, Pandarens were in other races' starting zones to train them to be monks.
Ex. you start in Elwynn Forest as a human monk. but you start in the Wandering Isle as a Pandaren Warrior.
But the fact you start at lvl 1 in both cases means it's new recruits. So it can happen at the same time as the expac taking place.
But take DK for example, only the races that were present during the DK starting zone made sence to be DKs. They added new races to the DK later no problem.
Interesting this gives us yet another "PC Generation". First generation being the first 8 races, plus Belf and Draenei happening roughly concurrently, with them joining their respective side just a bit later. Generation 2 would be Goblins and Worgen. Worgen PC started before the others but didn't join the Alliance until the same time as the Goblins. Gen 3 are of course the Pandaren coming just a year later. Gen 4 is the new isle starting zone. This includes the Allied Races I believe. Gen 5 will be these Dracthyr.
Not included are the DH's and DK's. There are obviously two generations of DK's but both of these have clearly been fighting for a long long time, whereas all the PCs generally start as recruits, except Goblin which starts as a head honcho and near leader of the cartel.
