Okey so I might have missed it, but did they announce what to do at max level? Like I know we have M+ and raid, but is there something else? Like the Maw was or Suramar. Just something else to do
It was a lot of work for players to only do once. A lot of players disliked it too. My dad calls it Sewermar.

No end game only zone, but they don't usually announce endgame stuff outside of raids etc in expansion reveals. That happens much closer to Alpha and beta, and in followup interviews.
Have any fan sites compiled a list of Evoker spells and abilities yet? I've seen a few gifs but I may have missed an interview or two going into more details.

Not sure about #3, but in general based on the announcement it seemed like they showed just stuff relating directly to dragons + talents and UI.
Like a lot of info was shared later in interviews. Mostly regarding systems that would carry over in some for.
As my guess for #3, I would say perhaps the way we interact with the world? Dragonriding seems to be about that.

As for the Night Elves, there is datamined seed that the Winter Queen gives, so it might be possible she provides them with a seed for a new world tree (speculation).
As for the Forsaken, I don't know what is planned for them. Thought I saw on Twitter that there were some changes to Brill, but don't know for sure.
Not yet. So far I’ve seen the following in a few videos;
Cataclysm: Flying in a straight path breathing down a steam of fire (Deathwing HotS)
Abundance: Creates a large circle of healing that culminates into a flower of energy (Alexstraza HotS)
Wing Buffet: Flaps wings, pushing back target (Alexstraza HotS)
Flame Breath: Typical dragon breath fire ability
Arcane Breath: A stream of arcane energy coming out of the dragons mouth. Actually looks sort of like a laser.
Twin Arcane Bolts: Launches twin bolts of Arcane energy towards targets
Prismatic fireball: Launches fireball in a parabola that starts out as five colors, then rapidly coalesces into a fireball (very cool looking btw).
Green mist: Summons a wall of green mist. Seemingly a healing ability.
HoT enhancer: uses Bronze time power to speed up HoT effects.
Flight: Dracthyr can fly and perform abilities while in combat!

I'd expect more Zereth Mortis-y approaches. Instead of just going through a zone and finding a rare, or a chest to loot, it'll be like finding a sealed door in a cliff wall that has hidden switches to open it that have to be looked for, or a cave with jump puzzles, or an NPC having a problem who asks you to go get something from nearby, nost as a quest but just as a dialogue.
