I'm confused about styles

I'm trying to create a new sentinel character.

Is Jedi Knight / Sentinel the same as Jedi Consular / Sentinel just different back stories?

Sentinel is the style of combat, Jedi Knight or Jedi Consular are the origin story you'll follow.

So to answer your question, yes.

A few years ago they changed the game so that you need to choose your advanced class at character creation. Previously you had to play a toon to level 10 before you could choose.

As a result, now people don't know what their basic class is. But Bioware has never been smart about such changes.
