I doubt China's going to start anything over a visit to Taiwan. They'll rattle their sabers, puff out their cheeks and glare sternly for a while, then pat themselves on the back when Pelosi leaves and claim it was their big scary army that made her 'flee' rather than, like, the diplomatic mission reaching it's ultimate conclusion.
At worst I can see them scrambling jets to do more scary flybys, but even then I'm not sure how much they want to risk fucking around with a US Carrier Strike Group within 'Find out' range.
There wouldn't be much point in doing so. The Chinese military knew what plane she was in and where it was at all times anyway, it's not like she was flying in a stealth fighter jet. It's the number and exact composition of her escort that you want to cloak, and I'm betting those aren't showing up on the flight tracker.

The flight route was deep in Malaysian, Indonesian and Philippines air spaces before they entered Taiwanese airspace. From Malaysia the flight crossed Kalimantan, across the Sea of Sulawesi, and north along the eastern side of the Philippines and into Taiwan.
USS Ronald Reagan (supercarrier) battle group which includes the destroyer USS Higgins, and the guided-missile cruisers USS Antietam and USS Chancellorsville was operating near Taiwan. Tripoli (superdeck amphibious ship carrying 25 F-35s) was also in the area. About half a dozen Japanese ships were also conducting maneuvers around Taiwan. So much fire power for an old lady.
