Subtlety for PVP and Assassination for PVE. Subtlety in PVP is as fun as it gets. Assassination was always optimal damage for a rogue in PVE for me. I did play a bit of (when it was and was retooled as "Outlaw") Combat but it was never as fun or felt like a real rogue to me.
My main has remained the same rogue since the tail-end of Vanilla, and I've played all three specs at one point or another; to this day, I'd have to say Assassination is my favorite because of its relative simplicity and the fact that it's a DoT-spec (which are specs I find the most enjoyable).
With the recent talent rework, however, I've been playing Subtlety because I've always loved the idea of a rogue dealing damage with shadow magic, and while it is very fun, Assassination is still my preferred spec.
Thematically Sub, but unfortunately Mut feels the best to play.
