Hows the tone and atmosphere of the dream zone so far?
I feel like that will be a big determining factor in the success of the patch, interested to see how you all feel about it so far.

Just briefly went inside, and definitely felt like Val'sharah. Not in a bad way at all, but nothing more to it than you could get from going to the Broken Isles and looking at the zone.
The entrance to it is definitely quite something the first time, but hard to say how much it will do for those that want more mysticism. Looking back at the Dragon Isles and seeing it completely overrun by a forest is mildly impressive.
Though then again, I didnt look at much more than the entrance over to Amirdrassil, so could be more interesting areas further in.

I feel like there's not much talk about how everything seems to be getting updated?
Usually in past patched they datamine stuff that's been updated but it's like 1-2 things. This time there's tons. And it's all old stuff too.
It's this just generally a graphical update they want to do or an actual revamp as well?

Ion said they want avoid Cataclysm issue and preserve pre-revamp zones. He clearly meant full revamp, not graphical update.

Here's the updated Silvermoon outfit. They seem to have replaced their green gems with blue.
I'd call that a revamp hint. Otherwise why bother updating them like that?
Not really. WoD, Legion and BfA all had large amounts of updates.
I wouldn't read too much into model updates, unless it's something at the level of <very specific building that there's only one of and it's in a specific old world location gets updated>. Like if you see the Thunderbluff totem tower or Loch Modan dam updated, go wild.
But things like ships and siege weapons can be used anywhere for any purpose. Remember that even fairly "iconic" things like the Stormwind Cathedral aren't singular, that model is also used in Dragonblight and EPL. Ships, siege weapons and generic racial/faction buildings are as valid for some "other side of the world" or Undermine expansion as they are for a revamp.
Not to mention random uses. For example, the three siege weapons we see in 10.2 PTR, and the ships, and the airship and zeppelin updated earlier in the expansion all just happen to be used in Isle of Conquest. So if there was an Isle of Conquest revamp like the WSG/AB updates, all of those model updates would fit right in with that.
Am I the only one to find the new dragonriding mount very ... childish, especially the head.
Even the Enchanted Fey Dragon looks more polished
