Yes, jetpack mounts and all of that, including flying in and out the zone. Undermine simply lacked, in the sense that all of that could have been possible, if Undermine was used in combination with Kezan. Look at the oncepts. There we see Kezan being used, with tunnels directly leading to it. Made more sense lorewise and the zone would be on our map. Not some separate single used map, that feels like an instance.
Updating Kezan and actually placing Undermine under the volcano in game was to hard and time consuming for them( lets assume the obvious) so they choose the budget option.

I'm doing the current meta achivements from TWW and man I hate those boring achievements where you basically have to go to wowhead and check the coordinates of 20 stupid things that would be basically impossible to find all on your own (read this, cast /love to that, open chests that only contain gray trash...).
If it was only 1 achievement it'd be ok, but there's like 10 of this kind. It's 2025, if they want addons to not be mandatory for reasonable gameplay, they should not require copying 20 coordinates from wowhead for a casual achievement either.

Honestly while I enjoyed the Earthen I think having the entire expansion take place in Kezan instead of creating a new island in lore would have worked just as well. You could have two above ground zones for Kezan itself, Undermine as both capital and a zone and then keep Hallowfall as a place the Goblins dug to trying to reach the Beledar with a slightly different story (in that the Arathi would be less friendly to the goblins who would have mostly arrived there to gather shards from the Beledar.) First season would be the Undermine campaign to free it from Gallywix which would have elements in every zone with the cartels being the Renowns, 11.0.5 would be the Nerubian invading Hallowfall with the current Nightfall campaign occuring, 11.0.7 would have had the end of the Hallowfall questing with Anduin being lost and the second season would add Azj'kahet and have us actually spend time in the City itself.
I feel all the Earthen give to the story is "Titans maybe bad?" We could have had that a different way.

Idk how true this actually is, considering there are leakes Cataclysm Classic Files regarding Housing customization which states the following:
Housing Exterior:
Component Size: Any, Small, Medium, Large
Component Theme: Human
So, at the very least, we can add and maybe change the different components of our houses exterior, and we can seemingly pick between the component themes for our houses as well.

Maybe we'll get a starter house for our plot, but it seems VERY clear to me that there's likely going to be freedom involved in terms of modifying and changing our houses exterior.

Now, my big question is this: Will we have multiple racial themes at the launch of the feature? Or will it start off as Human and Orc? Or will it always just be Human and Orc?
I'm gonna be safe and assume the second option: It'll start off with Human and Orc exterior options (with Earthen and Goblin options added at launch cause...well...TWW lol), and as time goes on, we'll get more and more racial options for our exteriors.
Meaning, during Midnight, I wouldn't be shocked if we got Blood Elf and Night Elf Exterior Components.

I'm still wondering if the rocket to the "other side of Undermine" won't end up being a neighborhood.

We don't know. The Panel itself seems to be about how Azeroth's changed over the years, and how it's gonna continue to change in the future with housing. It's entirely possible the panel will either recap the latest housing article and add some extra details for it, or it'll add in some extra housing information (I.E properly showcasing Neighborhoods for the first time, or summ like that).

I'm hoping for the latter, as PAX is a big event, and we've already seen stuff regarding housing interiors and whatnot. Would be cool to get a glimpse at Neighborhoods, with Gamescom being the proper Midnight reveal.
If that's how they're promoting it, it better be for the formal announcement of an old world revamp.... because yes Azeroth's changed a lot over time in the storyline, but in game it's barely changed at all: There's classic & Catalcysm....and then Lordaeron, Darkshore & Arath Highlands...those are the only instances where Azeroth has actually changed over the years. That's not much, and if you're not deliberately trying to explore the different phases you wouldn't even know they exist.
Realistically, Azeroth is changing because housing is being added, and with the furniture requiring old professions the old world will be seen in a new light so to speak.
Less realistically, Azeroth is changing because housing is being added, and we get confirmation that areas besides Stormwind and Orgrimmar will be on the table at some point.
On the less realistic side outside housing. We get a confirmation on the scope of the revamp in Midnight. We are not far off of when Midnight shows up on the datamined servers, so not unrealistic taht they would want to set expectations where they want them before people start whipping themselves into a frenzy over "DoodadIronforgeBurnt#11" and thinking it means an Ironforge rzone rather than burned variants of the Ironforge stuff for housing. As an extreme example.
