Unrelated note, if you do that questline as Dracthyr you can understand a conversation a pair of DF relevant dragons have post cinematic
For OP’s question I don’t really watch things over and over again but I did think that the cinematic where we finally see the 3 primalist dragons in action was pretty damn cool, the one which starts off with them being spied upon by the Dracthyr

Truth be told, for me, nothing really "epic" as happened for me. I'm digging the expansion (its theme, involvement of the Infinite Dragonflight) but nothing really feels monumental.
If I had to pick I suppose the ending cinematic for Vault of the Incarnates where the other 3 Primal Incarnates are released.
Here's to hoping for something big for GotD.
Can't really say there are any WoW-related cutscenes or cinematics I rewatch over and over from any expansion. But if I were to put forth what I think is the best epic moment from Dragonflight, I'd say it still belongs to the announcement cinematic itself:

Any moment dulls a bit repeating it on every alt, so I don't necessarily repeat Veritistrasz's dialogue and such every time even though I love it. But I'll do this quest ANY time it's up whether I need the rewards or not. It's just too good. The best WoW quest ever since Welcome to the Machine.
I'll briefly sum up some "iconic, but lengthy enough I don't repeat it on every alt" major moments based on my screenshots:
-everything with Veritistrasz from first meeting to the Forbidden Reach to Zaralek, down to the tale of Hraxian
-Duroz Scaletaker and Kolgar
-the blue dragonflight questline, with the pandaren section being my favorite
-those moments where you find an empty painting spot and interact with it, in that moment really taking a pause to appreciate how goddamn gorgeous the vista you're looking out on is. They first did this with the Empty Paint Jar toy in Shadowmoon Valley but damn it's effective. "May we never tire of its beauty" indeed.
-I can't resist chatting with the NPCs on the zepplins, every one of them on both Horde/alliance boats are spectacular.
-the Turtle Boat World Tour somewhat hidden on Iskara. Look for the one with pirates on it.
-The Lost Arvollo. You've probably seen it as a WQ target once or twice but it is a nice scenic little vacation cruise
-Mon-Ark and our climactic battle against the rot elemental Chonker. It's so hard to find this quest by accident but it is sublime.
-Venderthvan the sundered flame and the blue dragonlings in a tower at Cobalt Assembly.
-the bronze dragonflight questline with Azmrglglr and winding up in your own starting zone is fun to revisit.
-Mad Mordigan and the Crystal King. I just love the trail of stuff he's left behind ending in a pair of pants with the dialogue of "well that's not a good sign."
-finding Taivan's purpose. Such a good boy.
I really liked the Raz VS Alex flight we had in the waking shore, I also liked the wrap up of the azure span as the blue dragon flight arrived.
The best bits to come out of DF so far, imho, have been some of the instances. Especially if you are into the stories as much as the gameplay.
- Brackenhide Hollow may feel icky to run (appropriate given the theme, no?), but its very real story about saving our Tuskar friends from being eaten, and pushing back against the forces of decay... It's a visceral story. And I don't think we've seen the last of Decatriarch Wratheye. She gets away for a reason. The follow-up quest with the Tuskar kid and the yeti is wonderful.
- Syndragosa is a beautifully-realized character, the pillaging of her vault by Drachthyr is well set-up (i.e, we understand why they are doing it) in the questline, and the tragedy of her son is profound once you think about it and replay Umbrelskull's voice lines in your head.
- Algeth'ar Achademy is delightfully light-hearted, with nods to Hogwarts, and was even more fun on my mage when I imagined myself being excited to enroll.
- Halls of Infusion lies at the heart of the expansion, lore-wise, and the mini-boss before the last boss carries the dialogue the last boss can't manage. "...what that fool Tyr has done! We'll build a new world free of their corruption..." explains why there are so many NPCs willing to join the Primalist rebellion.
Best of All: Dawn of the Infinte
I've been looking forward to development of Nozdormu's story for many expansions and eager to see what they would do with it. I was disappointed it did not become a raid tier in itself, but mega-dungeons have taken on the flavor of 5-man raids, and I actually enjoy 5-man content more anyway (feels more personal and like I have a larger role to play). The story does not disappoint, nor the execution. They manage to come up with some new ideas for boss mechanics, even after all these years, and to give those mechanics convincing time-travel themes. The art is amazing, as usual. And the story hook of us having to choose which baddie to thwart - stopping Iridikron and his plots in the first (possibly erasing a whole future expansion, or at least raid tier), vs giving that up to go back and save our old friend Nozdormu. And of course there was never any doubt which Chromie would pick. Perhaps it was the right call. After all, without the Aspect of Time on our side, would any other accomplishments be permanent? This has become one of my favorite instances Blizz has ever done, right up there with "Return to Karazhan".

*the Duroz/Kolgar questline is one quest per weekly reset (I believe it's the same for the tale telling Djaradin behind the black dragonflight area in Waking Shores), This achievement tracks whether you've completed them https://www.wowhead.com/achievement=...s-of-the-story

If you generally want to go around and find some of the smaller quest chains in a zone, the "Sojourner of (insert zone here)" achievements help with that.
For me it's the interaction between Sabelion and Wrathion in the post-Aberrus questline. I've loved the pair's back and forth through the entire expansion, but there's just something about that final bit of interaction after the raid, especially the part where Wrathion asks if Sabelion thinks he's an abomination, and just how sentimental Sabelion gets when he apologizes that just feels me with a warm, happy, fuzzy feeling.
It's just nice. It's not epic or mind blowing, but it's just one of those rare moments in a video game where two characters interact in a organic, wholesome, and just plain nice way.
The Blue Dragonflight questline was fucking fantastic. I can't think of anything else in the entire expansion that was genuinely good besides that. Plenty of things to like in DF systems-wise and mogs and so on but no, nothing I'd rewatch or do again.

The animated series have been so weak that i can't even believe Blizzard would fail on that department like that.
There has never been a cutscene I cared about in WoW. WoW lore and story is pretty terrible imo and the last reason I would ever play the game.
For DF? Nothing really.
There are good story bits that are definitely worth watching, but rewatching over and over? Nah.
I'd like some more "Badassery" TBH, most cutscenes are about character development, which (While interesting) doesn't make for many "Let's watch that again!"-moments.
