    Enchanting + ? = good combo

I plan on having 3 toons in cata.

    Shaman - alchemy / herb
    Pally - mining / jc
    Druid - enchanting / ?

what is a good profession to go with enchanting?

    Tailoring.

tailor if your MS is casting. Else LW or BS

tailoring, you can disenchant what you make

Tailoring. They're both totally independent professions, and as you craft tailoring items to level it, you disenchant them to level your enchanting. Symbiosis ftw.

tailoring as a druid isnt kind of wierd?

I've been Enchanting/Blacksmithing for years. With the homogenization of tradekills so BS/JC isn't the OMG MIN MAX anymore in cata.
Enchanting gets some amazing things!, and 2 sockets from blacksmithing is always a bonus

I had almost the same setup but made a DK as a farming alt for Cataclysm (as you can now track herbs and vains at the same time)

    DK - Herb - mining
    Paladin - BS - JC
    Rogue - BS - Eng
    Druid - Alch - Scribe

Unless you want to commit suicide early, dont lvl JC more than once.

Any profession that you can craft disenchantable stuff with is pretty good. Personally I pair it with jewelcrafting, and it's one hell of a money maker.
The synergy with inscription rests with the fact that you can craft scrolls to sell your enchants on the AH with - but if that's not something you do a lot of I don't see how it'd do you much good.
