Good luck, but I don't expect you'll find anything like a model, name or stats just yet. Ever since datamining started, Blizzard have been fairly successful in hiding their legendaries for a much longer time than other patch content. Unless my memory is faulty, Shadowmourne was actually first discovered when a Blizzard employee linked it on the 3.3 test realm.

I posted this in another thread, but it correlates so well with what you found, I have to put it here too. Just going by the new icons on wowhead.com, it looks like this (inv_staff_branch)
and this (inv_arcane_orb)
are put together to make this (inv_stave_2h_firelandsraid_d_03_stage1)
which somehow grows into this (inv_stave_2h_firelandsraid_d_03_stage2)
and finally this (inv_stave_2h_firelandsraid_d_03)
Which easily looks just like it could be made from the datafiles you found.
