yea its mostly about enchants, u get slightly more int with offhand, and a main weapon enchant but a little less spirit, then again Spirit is not a very important stat for Resto druids anyway. And u can also reforge spirit on offhand to Haste.

MH/OH for totem killing purposes. And better enchants.

In general, two handed caster weapons give stats (secondary stats). Main hand and off hand combo gives spellpower (intellect in cata, primary stat).
It all depends on what you're looking for: more stamina and secondary stats or a small boost of intellect.

For kin its nobrainer mh/of. For tree if you wanna spirit then you must go staff.
