I think the Chess was the easiest boss ever made. No need for tanks, healers, dps, couldn't die and if done right, could be soloed. I don't think there was ever anything like that...
Wrong. I is so sad, but during the ToC or even ICC time in wotlk, I joined a pug for a naxx10 run just for fun. Noo one even knew the boss fight, or did listen after I tried to explain it after a whipe. Adds? Running around, hitting the healers. Everyone hugging the boss during locust swarm. It was a total desaster and I just left after a few wipes with abolutely no progress or even a shimmer of hope, that someone would even listen.
Chess, Gunship, Shade of Akama, Void Reaver, Lurker Below come to my mind as the easiest. I'm not even going to include any of Naxx 10/25 as it was preposterously easy.

Vanilla: Grobbulus was embarrassingly undertuned. After killing patchwerk, easily harder than anything in the plague or spider wing, they give you a blind, retarded loot pinata. It was actually a little depressing because it was kind of a cool encounter. Every guild that killed patchwerk immediately killed grobbulus with less than 3 pulls of the boss.
TBC: Chess event. Could be stealthed to and soloed after clearing the opera house, but that would make the rest of the raid mad. Again, this had potential of being fun and challenging, and I personally was looking forward to it, but man what a letdown. They could have just made it a legitimate chess game.
Wrath: gunship.
Cata: nothing really stands out yet as the definitively faceroll encounter, which is a good sign. I mean you could say Baradin Hold but that is designed to be pugged by people in greens and pvp gear with pvp specs and I would say is tuned correctly.
Vanilla: Dunno Shazzrah was a bit of a joke
BC: Chest I guess that is technically a boss
Wrath: Gunship
WotLK: gunship
Cata: Atramedes (haven't tried pre-nerf, but..)

Cataclysm: Shannox for me...very easy according for me.
Classic: Bad with names...it was the caster guy in MC. Way back when.
BC: First thought was Void Reaver, it made Gunship look hard.
But, you know what, I'll go with Solarion after they nerfed her hard.
We walked in without knowing the strat aside from "IF YOU GET THIS BUFF RUN AWAY", and one shot her without a single death. That was unusual for a BC raid boss. Hell, loot reaver and Nej'entus took atleast 3-4 attempts each.
Wrath: Noth. DPS, win. Easier than gunship.
Cata: Magmaw on normal was a joke, as was Halfus.

In wow it has to be Gunship in ICC.
(Any other game, all bosses in Chip'n Dale for the NES)
