If blizzard would do this I would go straight to RP server and make Fat Gnomes and Dwarfs guild. These players would never make it to lvl60 because they would die of heart disease.
If you want to play fat people pandaren are waiting for you.
As long as they're actual new models similar to KT humans, then I'm all for it. I'll pass on body sliders though, they're an absolute shit excuse for customization in most games (especially MMOs) that use them and I'm thankful WoW has stayed away from them.

One of the reasons I used to steer clear of male characters until the nightborne was because they all look like body builders. It just doesn't make sense for a mage to have such giant muscles, like Arnold from the 80s. If there were a way to customize them to be less bulky, I'd probably play one. Well, if the human male's voice wasn't so annoying.
The Thin Humans would look great as spellcasters.
Panda is another story (they are healthy and fat like bears). But we should not push it to other characters. They will do it for kultirans which is not a good idea.
It is better to keep showing a healthy form to the public. I understand that skinny/fat in the mix is a better representation of the society but not a good idea.
I don't think I would make much sense lorewise for a hero who is constantly making physical effort to be fat
