There were tons of DKs on release. Dual-spec and even spec swapping wasn't even a thing yet, so when DKs came in able to DPS or Tank in any of the three specializations, and could also do so fairly effectively with any ragtag set of gear they had acquired, this gave DKs a ton of flexibility in terms of filling roles in groups, and also just in terms of gearing up. Wrath was at its highest player count the game ever had, so groups were even more common which even further made this flexibility more noticeable. And it wasn't just that, PvP gear was actually pretty good for PvE back then, and because of the power of DKs on release allowing them to be PvP powerhouses as well, this allowed them to gear up in that way more easily as well which could exacerbate the power they would normally be going into PvE with relative to other classes.

Monks needed to level from scratch when they were introduced. So, a lot of monks were rolling around in the early levels but specifically the new additions of Pandaren were trapped on their starting experience like Worgen and Goblins until they finished - which meant that playing with other players was difficult unless you were rolling one of the old races. Getting a monk to max level before Pandaria was available to everyone else wasn't an option, so at the very least Monks would be playing catch up to all the other classes which meant if you wanted to main a monk you basically had to be dedicated to playing catch-up. And while Monks had some gear being agnostic between tank and dps in terms of weapons and armor sharing agility, there was a large discrepancy then between healer leather and agility leather so there was yet another terms of catch-up that DKs and DHs had to worry about significantly less. And while the introduction of monks was no doubt a boon to the low-level queues and dungeon finder, at the high-end the monks were a bit of a rarer breed. The monks were powerful, but the xp buff wasn't so generous that a lot of monks were being seen at level cap so the power ratio just wasn't being seen. As well, PvP gear wasn't as relevant as it was in Wrath for PvE so the class performing well in both areas of the game didn't cross influence each other as much as it did previously for DKs.

DHs started at the highest level relative to end-game content than the other two on release. As well, they could immediately jump into Legion, whereas DKs had to go through Outland before doing Northrend. DHs though didn't have the benefit of having three specs - so if any of the specs didn't fit one's playstyle, it would decidedly not have any other options to go to with whereas DKs on release could do two roles very competitively in any of the three specs without having to worry. Yet, DHs did release with plenty of power and were available at end-game even faster than the other two classes so despite this the class was able to display its power at the high-end at an effective level. And while DHs did share some gear like weapons for tank and dps, it wasn't nearly as easy in Wrath or Mists for a dps to swap to a tank with a set of the same gear - so even though the two specs were available, the spec flexibility was even more noticeably weaker than DKs and Monks.

Overall I think DKs were the most friendly on release. The flexibility was so insane for its time and such a scale of power, flexibility, and convenience all in one hasn't been replicated since. Monks were hampered by the xp bonus not being all that effective, not being able to easily do all the roles in one set of gear, and not being able to do all the roles in any spec that they wanted. Sure DKs didn't start at as high a level as DHs did, but considering just how far ahead of the curve they did start still let them be somewhat relevant for some low-level dungeon runs and also allowing them to skip a lot of the trivial leveling and get to level cap in an efficient manner while still being able to enjoy all the perks of having all the flexibility of doing whatever job in whatever spec with whatever gear they acquired along the way.
