Well, if you're just starting out, I'd recommend wearing slightly heavier armor and trying to get a good stability shield and just blocking/tanking stuff rather trying to roll. You'll learn enemy attack patterns over time and get a hang of rolling out of the way, but starting out just blocking is a little easier.

I figured the less I actually move in touhou, the better results I get

Well you definitely want a lot of endurance. THat gives you more stamina to dodge/roll/attack/etc with and increases the equip load for you to wear heavier armor/weapons. After level 40 endurance, though, it stops increasing your stamina, so that's usually a good time to stop putting points into it.
After that you'll want about 25ish vitality to have a decent health pool. Maybe more since you're new at it.
Then you'll want to either dump the rest into strength or dexterity, depending on what weapons you want to use. (strength is big, hard hitting, slow weapons/dexterity is fast, small weapons)
If you're feeling really adventurous your first time through, try putting some points into prayer or sorcery and play with some spells.
