Orc for mail/plate
Undead for cloth
Tauren for leather/mail (assuming their is a kilt)
I would play any of those combinations happily.

Orc because of their lore and attitude, second would probably be Forsaken because i love how mysterious and shadowy they are, animation wise Pandaren are pretty up there.

Undead. I've always loved the idea of a free-willed, intelligent undead species and their character models have aged pretty well (mostly because they're SUPPOSED to look terrible).
