ALL games have an AD carry, well, they do in Summoner's Rift, because it's very important in that map.

But in maps like Dominion, Twisted Treeline and Proving Grounds, it's not very important because most of the games rely on having good poke, good damage and being very useful early game, and all ad carries aren't like that early game, well, atleast most aren't and it also depends what other champions you have in your team and/or what champions your enemies are using too.

Poke means using an ability to do damage without receiving any kind of damage, poke are usually abilities that have long range, meaning that you won't get damaged return on you, for sure, most of the times.

Yes, auto attacking can also be considered poke considering what I said above, especially in the lane phase.
