Having lots of endurance (stamina) could always come in handy. Lets you block stronger attacks, if you're too heavy to properly dodge out of the way.
You'll also get to wear heavier armor with more endurance and thus increase your poise - letting you basically tank hits while swinging your beastly sword.

So, what's going on in the thread?
Armor sets, not counting weapons and shields, only weigh you down and don't require strength. Endurance increases your equipment load, and having less than 50% of the equipment load lets you run faster. 50% to 100% slows you down and makes you do the fatty roll. Anything above 100% brings you down to a walk.
So if you increase your equipment load even further with some special rings, you can equip really heavy armor and still be somewhat quick.
