As you "Skin" the creatures. http://en.wikipedia.org/wiki/Skinning
Those things are made of or attached to their skin. Hence why it is skinning.

And if you want to really think about it - if you skin a human you end up with a a thin, fine leather.
Also, a verb doesn't need to have a connection to the noun it is associated with. Why do you brew tea or coffee? Why do you slice bread? The designation of the action and the result of the action or material generated by the action are not required to have any verbal association.
I never understood why mining is called what it is either. I mean rock hitting sounds so much better.
Let's call it "flaying" instead. I think that's a little bit cooler.

Fur is hair attached to skin and leather is treated skin. See where this is going?

it's skin. leather jackets and shoes and everything else? that's cow(or lamb or...whatever) skin.
leather is just what we call skin after we process it a little so that it stops rotting.
Why is milk called milk? Why is the color red called red? Why are apples named apples?
Seriously now. You do know leather is made of animal skins, right?
Skinning is called Skinning because u Skin the animal to get its skin. In RL you dont automatically get Leather from skinning something. the Skin needs to go through a prosses called tanning before it becomes Leather, in WoW there just skipping that bit
