Usually cooked with the skin on. I don't usually eat the skin though (depends on the fish).

Depends a lot on the fish. Usually leave it on for the flavor (like salmon), though I don't really eat the skin.

As many have pointed out, depends on the species. Salmon, trout etc ALWAYS keep the skin on. Catfish and related, sunfish and related, skin off.

EDIT: Also, I only eat fish I catch.

Most of the native fish we eat here in Nebraska are carp, crappie, and catfish, in which case the skin/scales get taken off because we fry them. The only fish I leave the skin on for is salmon and trout, which don't get fried.
