You could always not have tofu. It's also not sugary in a sweet way (sweets are my least favorite thing next to mac n cheese), but a rich sauce kind of way. You could also cut the sugar content in half, but I think it needs sugar to become a thicker sauce. You could try shabu shabu, but it's a lot more boring and less flavorful. More goes into it though, since you cook each thing by hand. Lots of waiting, and you can do cool stuff with it.
Other than that you may want to check out some Chinese hotpots. Those have spicier/nicer broths that you can cook items in, but not a sauce for it to caramelize in.
