This has to be the worst trolling I've ever seen. Potatoes are God's gift to his children. They're just so damn versatile! You can boil them, mash them, stick em in a stew! What more can you ask for? I read on reddit once that you can live forever just eating potatoes and some kind of dairy. So I assumed mashed potatoes were the perfect food.

Yeah. It's not too bad, as you can do a lot with a potato. Lots of simple dishes that allow you to switch it up so you're not eating the exact same dish everytime. They're also pretty filling.
There's a definitely a lot worse things to have to live a week or 2 on.

I love mashed potatoes with butter, garlic salt and pepper with corn.
I don't eat it much anymore though because I am a diabetic.
Potatoes have too much starch, carbs and sugar I think?

Is there part of the story that is missing?
Are you allowed anything with the potatoes, can you mix anything in with them? If its just potatoes, but you can't mash them and add butter or milk, or fry them and add spices, potatoes pancakes etc etc there would be a lot more to know before I can say yes or no.
If its a baked potato with not sour cream, bacon, dill, butter then it will be dry as fook
