Switch between Normal and Heroic in raid?

I'm getting back to some casual raiding and if I remember correctly at some point during WoW you could change raid difficulty on a boss per boss basis.

So like you could do some bosses on normal difficulty in Emerald Nightmare, but switch to heroic for just a few, then go back to normal. Is that still the case or?
