It depends on the animation style.
I can’t stand the Anime artstyle at all. But I’m okay with the western style of animation.
Many adults are fans of family cartoons and take them seriously.

Depends a lot on the generation. And not sure if "take seriously" is the right term. "Appreciate its nuances and themes" might be more of what you're getting at. Gen X (my brothers' ages) and younger (between Gen X and Y, like me and my cohort of friends; or Gen Y like my wife) can and do appreciate some animated films and series.
That said, Batman Ninja looks amazing.
"Your Name" is a 2016 movie that was like #15 grossing of all 2016 movies, animated and otherwise, internationally, that's amazing for an animated feature.
Give it a watch. It starts a little slow but I think anyone would appreciate it.

Even my 62 years old mother is able to enjoy proper anime or animated movie. Point is art is art, stories are stories. My mother cried like a baby watching grave of the fireflies. You want to get older people into animation, show them reletable stories that can interest them. Not a bunch of stupid cute girls to cute things shit.
Depends on the people. I've met lots of people that love Anime. I've met lots that say Anime is for Children. I showed someone Berserk once and they said it was still Childish. Some people are weird.
I can't take western cartoons seriously. I CAN take studio Ghibli, Death Note, wolf's rain, and all many great eastern anime seriously. But not all of it. Can't stand teenage anime. Though the jokes are still generally superior to western jokes.
op would probably love gargoyles which was a more teenager/adult oriented cartoon produced by disney in the 90s

It depends on the film - I tend to prefer computer animation. There are certain authors; actors and actresses I like, but that doesn't mean that I like everything they do.
The Looney Tunes under Chuck Jones, some of that was art.
