so really, the only possible shield if this is tax evasion or tax fraud, is was it past the statue of limitations since it might all be 10-20 years old by now

I don't know what the statute of limitations on these charges is, but if the alleged behavior continued up until recent years then Trump could absolutely be charged along with any potential family members involved in the shady business.
