These *terrible* mechanics added much flavor to being a hunter. Blizz should have kept the ammo and feeding pets well into current retail. You want to keep a pet? gotta feed it so it doesn't run away. You have a gun or a bow? gotta keep ammo on hand.
This could just be me, but i think it adds to being a hunter.

Just a reminder that there are not "so few Hunters" as claimed.
They are the 3rd most played class in Classic.
Bad dps, 1-10 is hell, crappy classic pet ai, ammo and deadzones. Just to name a few reasons. Its like the class you pick if you want inconvenience on top of your inconvenience.

Every Frost mage I came across would Frost Nova me then get in the deadzone and I was dead without being able to fight back at all. Biggest bullshit in the game. Then premades figured it out and PVP for a Hunter came to a slow agonizing death.
I started playing WoW mid-TBC and hunters were pretty good in Black Temple and Sunwell (and the earlier raids). I was always towards the top of the meters so I'm not sure when things changed, but it did.
EDIT: for the most part hunters were pretty good in raids in future xpacs too. I quit towards the end of MoP, but we were always towards the top in DPS (depending on the fight) in most raids.

Really? The first day I only saw warriors but few of them seem to be left at higher levels and a lot seem to have moved over to hunters. I mean, there are hunters litteraly everywhere. Hunters and warlocks. Classic leveling is pain as anything but a pet class (oh and mage).

Maybe they are #3 on some backwards ass carebear server like Pagle or Atiesh. However, on real servers they are 5th or 6th.

My first main in vanilla was a hunter. My first toon in classic is a hunter. Regardless of what people say, it is a fun class.
You play the game to have fun, do you not? If you don't find it fun or convenient to play a hunter..you don't need to. Simple as that. You just have to keep an ample supply of ammo when you do a raid or quest grind. That's not hard to do, given that you can buy ammo pretty much everywhere there is a quest hub with vendors. :P

I also specifially stated in my OP I was running Census on 6 servers in order to find a new home. I wasnt even trying to figure out class popularity, only faction numbers. i just noticed the pattern of low Hunter numbers. Im basing topic on what I saw. Also the servers where they are #3 are all carebear servers. On real servers they are 5th or 6th.
Meta is to spam dungeons with spell cleave and aoeing mages / warlock. It is pretty hard to find spots as a dps if you are not a mage or a warlock.
I know many who rerolled from rogue and hunter to mage. Leveling speed is much higher (after 25ish) and they get much more gold as well from spamming dungeons. On top of that you avoid wpvp if you are alliance (as it seems they are pretty much outnumbered on every pvp server, and it is getting worse).
In my guild, hunters are 45-55 where dungeon spamming mages have already been 60 for awhile and rich and the rest of us 35-45.
