Any mount that allows you to stealth while riding.
Bats and motorcycles fit, IMO.

Flying - Legion class mount or Bloodwing bat.
Ground - Bloodfang Widow. Smoky charger or Garn are pretty discreet too from a rpg point of view.

I liked using the Amber Scorpion on my Gnome Assassin. I thought the poison theme worked, and it looks badass, especially when a Gnome is using it.
I'm a thread killer.
I am a big fan of the brawler's guild basilisk/crocolisk, or a good nightsaber. For flying mounts, I'm a big fan of dismounting from my class mount, popping a glider kit, and entering stealth to swoop down on my prey like friggin' Batman.
Class Hall Mount is the best right now I think.
Ground one? The black panther from Brokenshore.
I go for a scourge'y look. Got an undead Rogue with tier 3 and Invincible Reins, fits really well.
My rogue is Outlaw, and Human.... I use:
Class Hall ravens, for flying.
Experiment 12-B (not actually sure why, except maybe to remind me of the pain of the Legendary daggers grind...)
