Up until 2017 I would. Now I’d have to ask them a few questions first if they are unconscious make some educated guesses before I considered it.

There is however a lot of people in today's society that would just film it with their mobile camera instead as we have seen time and time again.

Without question or hesitation. I've done it before where someone was in trouble and have pulled over to help them. I remember one such incident where an older man was riding his bike and fell. I immediately pulled over and ran to him to make sure he wasn't hurt. He was old enough where he was slow to get up, so I picked up his bike and helped him onto his feet. Fortunately he only got a scrape, and wasn't injured. He seemed grateful that someone came to his aide though.

I'd call an ambulance, but I have no idea what I could do to physically help them. I'd be scared to move them.
I would absolutely help. My family is full of first aiders, so its practically in my DNA to run to someone in distress.
If I'm the only one there who can help, yes, I absolutely would. I don't have any kind of training as far as first aid or that sort of thing, but at the very least, I'd call 911, stay with the victim until help arrived, try to keep the victim talking and as comfortable as I possibly can, and explain to the paramedics and cops what happened.
I'd also try my best to help the cops find the asshole who did it (give the best description I can of the car, get the tag number if possible, etc). Because hitting and running is not cool at all.
If others are already helping and clearly don't need me, I'd move on. It's not going to help anyone involved if I get in the way and slow things down, especially if people who are trained to give medical assistance happen to be there. And I'm not going to be that guy standing there with a phone out recording everything.
Also, I may be wrong, but I'm pretty sure you can't (legally) just walk away and leave someone to die on the ground if you're the only one there who can help, at least in most of the US. Not that I'd ever do that anyway, but still.
