Depends on how much time you want to put into it. I would argue alch and inscription are the most profitable by far but they make their profit via bulk sales of runes and potions.
Any gather profession is the best for making gold passively.

Many guilds raid wednessday evening EU, so every consumable sells 100 times faster than at monday morning and at a better price.
Maybe do some research when the guilds on your realm raids.
Buy mats when they Are cheap. Maybe even Buy ready made consumable when they Are super cheap.

You shouldn't do that. I think that it is better to master a profession, such as designer or marketer, and try your hand in this area.
It didn't work out for me with the fishing. Alchemy, on the other hand, is a really good way to make money.
