I've included where I would house some of the WoW races below, but I'm curious where you all might put them.
-------------------------------------------------------------
Alliance races which I think have a proper capital currently: Humans, Dwarves, Draenei, LF Draenei, Void Elves, Dark Iron Dwarves, Kul Tirans, Mechagnomes
Horde races which I think have a proper capital currently: Orcs, Trolls, Tauren, Blood Elves, Highmountain Tauren, Nightborne, Zandalari Trolls
Forsaken/Undead - There is no better spot for them to be than back in their old home, the Undercity under the Ruins of Lordaeron. Many of the Forsaken are former Lordaeron residents, and once they clear out the plague should be allowed to return home to rebuild their former lives. Given that the Worgen will want Gilneas back, the proximity and animosity between the two races may be an issue to consider.
Gnomes - They tried to take back Gnomeregan just before Cata & only got some of it back, but Thermaplugg has since been killed by the G-Team. The gnomes could build out New Tinkertown some, but they might do just as well to team up with their new allies from Mechagon & see how much of Gnomeregan can be truly cleaned and made usable once again.
Goblins - Given that we just drove the Venture Trading Company out of Kezan, that seems like it could once again be a good Goblin home. Azshara has largely already been shaped as well, so they could instead build there and perhaps trade out the Gallywix Pleasure Palace for a proper Bilgewater home. One other unusual alternative could be Undermine, but that's really for all Goblins, not just Bilgewater.
Maghar Orcs - I can think of no better spot for them on Azeroth for a capital city than The Crossroads. The land nearby is very similar to what they might find in Gorgrond, including a small oasis that would probably be similar to an Everbloom. Their engineers could rebuild The Crossroads into a fantastic garrison with Blackrock Foundry-like architecture.
Night Elves - This one is IMO the toughest on the list. They won back Darkshore during the Fourth War, but at this point it is a fraction of it's former self. Given all the destroyed towns and the reality that Teldrassil is forever gone, there is a lot of rebuilding to do to make Darkshore their home once again. That's likely the best option, though an interesting secondary option IMO could be Duskwood. They could build a great new city around the Twilight Grove and would likely fix many of the issues that are plaguing Duskwood rather quickly. Still though, it doesn't have the same reverence to the Night Elves that Darkshore does, so rebuilding Darkshore is likely the best option.
Vulpera - This one is a little tricky as we don't know the current Sethrak political situation after the events at the Temple of Sethraliss. If Vorrik has actually united the Sethrak, he's likely to work to mend fences with the Vulpera, which could lead to any of the abandoned ruins there being a good safe place for them. If there is still turmoil, then the Vulpera might do better to move closer to Orgrimmar. Depending on how each of the settlements in Durotar & The Barrens wound up after the Fourth War, there's a chance that Tiragarde Keep or Northwatch Hold could be available, or that the Alliance might be willing to consider trading some territories to help keep the peace.
Worgen - Gilneas was their home for years before the Forsaken drove them from it under Sylvanas. If the Alliance & Horde are truly to remain at peace, then the Gilneans must be allowed to return to their homeland and remain there safely. The land will likely need some cultivation after the plague was there for so long, but that can be done with the help of the Cenarion Circle & the Night Elves.
