If you are max level (currently 70), you get bonus gold instead of XP for completing quests. If you've arranged to do most of your leveling through dungeons, that can result in a lot of quests you can power through for some easy gold. You will probably not get 7000g this way, however, so you'll need to combine that with more traditional farming options as well.
If you want "afk income," I would try to level Alchemy or Jewelcrafting gradually, and just rely on selling your transmutes/transmuted items. It will "cost" to level, but once you're there it's pretty much pure profit.
I am level 70 now. The daily gives 9 to 10 gold.
I have to do 700 dailies to get 7000 gold.
The daily is clearly faster than the mining, but still 700 dailies ...

Unlock all daily quest hubs and do the daily quests. I'd also add use that time to also run 5 man for more loot/gold. Invest time in fishing/cooking and work towards a couple of main professions

as a level 60 death knight u can make 120-300g an hour in blood furnance, at 70 you can make 500g in ramparts with pvp gear.
as a prot warrior u cna make 1k gold an hour boosting sethek halls
as a mage u can aoe dungeons
as a rogue you can pick pocket or mine inside dungeons
as a healer you can make a 10man raid kara/za and soft ress the greens or amani sticks (10-45g per golden bag if lucky)
as a tank you can do same as above even
as a warlock you can farm motes or similar
as a hunter you can farm old dungeons or bosses in level 60 dungeons
as any above you can do old zones or quests that you forgott or skipped.
these are just a few ways to make gold
you can do all these things but apply wotlk versions of above. also dragons eye will not sell for much as half the game will be JC by demand
Probably not the most efficient compared to professions, but i leveled a Warlock and did 80% of all the quest in Outland, didnt do Terokkar Forest tho. Then i leveled a DK for some dungeon farm, but just ended up also doing the quest like i did on my Warlock, and i think i earned rougly around 6k gold in quest rewards so far. And if you can do the zones without too much competition you can actually do them pretty fast. Some might find it boring, but it's pretty chill and guaranteed gold
People need to learn to sell shit on ah instead of vendoring. A green that has vendor value of 2g can sell for 3g on ah. Various herbs, white materials etc all sell on ah for way more the vendor. Make this a habit and you will make a ton of gold from 70-80.
The jewelcraft's Dragon Eye is selling like hotcake, 450 gold.
The mining is so-so, but I can find node easily.
The potion is screwed up by the Northrend Adventuring Supplies.
The skinning is losing money on day 1.
I got the fast flying and dual spec yesterday.
