I play an Elemental Shaman, so I suppose you can guess what I do.

In WotLK, however, when we were awesome, and came across something I couldn't 1v1, I'd give it all I could, fuck that asshole on the other side of the screen, got to make them work for their kills, no matter if you can't win.
When the arena system was first introduced, before the season actually began, a friend and I were messing around doing 2vs2 Skirmishes - holy pally and resto druid - when we came up against 2 holy paladins. The skirmish went on for over an hour, before finally the match ended - I think we won, in the end.
Next skirmish - we meet the same two paladins. Stripped off as much gear as we could and /danced until they won the match.
Only time I've ever let someone kill my character without even attempting defense.
If they get the jump on me and I am fishing or taking on a few mobs or something so I can't readily respond I usually just let them kill me, so I can rez and get back at them faster.
I used to do the hunter hop back in TBC whenever a macestunlol warrior caught me off guard.

The queue starts at 45" when the first allied dies, so if I know when the queue start I could be able to predict when I can die and re-spawn quickly, full of mana, and near the base XD
When that happens, I usually /dance XD

But...sometimes I just can't win. Just extend the agony.
Those times are the ones I really hate be a holy paladin, and cry for some serious cc or a mana burn, or something like that
Then the time make me forget, and I go back to love my class XD
At least until VanasKOS make me remember how vengeful I can be XD XD XD
I'm a rogue, I don't need to do stuff like this.
If i ome up in a 1v1 against a Blood DK, Frost/Arcane Mage, Protadin (if no forbearance), or Feral Druid I just let them kill me depending on their health, although if they have <105k for example I will go at them (obviously Tanks have higher), because it means crap gear.
The only time i've given up is as a Prot pally trying to kill well geared healers. Bad ones usually die, but for the good ones the damage output is just not enough in the gear i had.
After 5 minutes theres usually just a mutual parting of ways so we can go do something useful.
Since most 1v1s involves me losing ... then you get used to just say "what the heck".
