There could be several reasons:

1. He is asexual/gay and does not want a girlfriend.

2. There are a very limited number of eligible girls in lore and none of them are his type. Or he is not their type.

3. He has more important things to do with the Legion invasion.

4. Blizz finally realised that they don't do romance well so they just decided to not do something like this.

I feel like it doesn't make that much sense because Greymane is already like a father figure to Anduin, arranged marriages tended to be more between hostile/neutral kingdoms and not between ones that were already allies. Ofc it could still happen so Anduin ensures that someone he trusts takes over stormwind after his death.

True. Politically it would make more sense for Ress to marry Lor'Themar. But that won't happen while Jaina is around. But Gilneas has fallen and nobody will carry on the Greymane name. I could see Genn wishing to make sure that his descendants continue to lead a great human kingdom.
