So I swapped your traits, switched you to an Inquisition build and a few other talents, swapped gems/enchants to Haste (also if you have more haste gear, swap so you can get higher than your current ~11%) but here's a pretty solid DPS gain from your current setup.

Some other small points: It may seem insignificant, but using Cavalier is a pretty good uptime % gain, which equals to better overall DPS. Also, Righteous Verdict is more my personal preference, but it is still a slight single-target DPS gain. A lot of the bosses in BoD are ST encounters, or encounters where you're going to be using TV over DS anyway. Opulence is sort of the exception but only during small add windows, so RV is still a better choice during the rest of the encounter. Finally, Fist of Justice will get you more HoJs. It's one of the longest duration stuns in the game, get more of it (Especially for Mekkatorque's adds when grips are going to be possibly delayed).

Hi, I'll try and keep this digestible but just say if you want anything expanded on. I'll use Grong mostly since it's the closest thing to rng-free single target this raid.
Quick and easy increases:
-DP/Inq are better than Crusade with your gear, but if you still want to play it because it's fun it's not the end of the world.
-Hammer of Wrath is at least 700 dps ahead in the 30 row, fairly non-negotiable I'd say.
-Potion usage, one a couple seconds before the pull for your opener and one later on during another set of wings, again about 700 dps so you can see how these things add up fast.
Then I'd say next you probably want to practice each thing a fair bit before moving on to the next so it all gels instead of trying to do everything at once.
Opener:
So in your opener you're using wake too early and as a result losing TVs which is especially crucial for crusade since you want it to stack up quickly. What you can't really go wrong with is Judge -> BoJ -> Wings -> TV -> Wake -> TV -> play as normal. Similar for when you're using wings later on in a fight, generate holy power beforehand so you can spend immediately.
Spender choice:
There are a lot more DS casts than free DS procs even on a single target, with righteous verdict you should try to only use it with the empyrean power proc or on 3+ targets.
Holy power:
On exactly a 3:45 fight like Grong you'd expect 58 TV casts, you had 32 casts so we need to find out where they all are. From above there were 14 DS casts with 8 empyrean power procs, 1 of which wasn't used so we can say that's 7 additional TV casts were that to be fixed. The rest can be attributed to two things.
Firstly overcapping holy power without spending, here there was a total 27 wasted holy power some of which was from Wake of Ashes which is sometimes going to waste some, so this cost you about 8 TV casts.

Then also general uptime pressing things on cooldown and using every gcd you can, if we look at the link above then 100% on the main spells is pretty unrealistic but it's a total 40 holy power unaccounted for which would actually put us at 60 TV casts so it near enough adds up, rng depending. It feels like a ridiculous thing to say but generally you can tell if you were getting as many TVs as you could because it'll be 45% of your damage.
Mostly it's just really important to stress that these are the two biggest things you can ever improve, like there's often a lot of focus on the little things and gear differences but ultimately it's all minor compared to pressing buttons on cooldown without wasting resources. And it's not easy because there're so many causes that, speaking from experience, often you won't even notice you're doing it until you record it and watch it back. The most common things I think are like focusing so much on mechanics that you forget to press buttons or ignore holy power for instance, or being out of melee too much on bosses that move a lot. Hopefully this was at least a bit helpful.
Besides what was mentioned, what does your UI look like? If you're using the default UI, you might look into getting more of the important abilities, holy power, and alerts closer to the center of the screen (i.e., where your eyes are typically looking) instead of having to look all over the place to keep track of everything. Do you use keybinds, or are you more of a clicker?

I am a 400-402 ilvl zandalari pally and have the BiS azerite traits currently. I run the one that increases mastery when I proc wings and the one that makes me explode for holy damage whenever I do a finisher. I run 2 of the mastery and 3 of the wing explosion trait. I also run 1 of the free divine storm.
I mainly stack mastery for extra holy damage since it bypasses armor. So I focus on judgments and templars being my damage output. I can burst up to 40k self buffed with lust and maintain 25k on average.
I run the repeater build with focus on templar damage. Currently with azerite traits and wings procd my templars can chain crit for over 100k.
In aoe situations I can burst over 100k dps. I've also broken the judgment system and have critted for up to 265k with 1 judgment.
I was looking around on WoW logs when i noticed that the top DPS paladin right now is stacking crit and going 3x expurgiation, what changed?

Well I was wanting to run this build. Essentially that dot burns for holy damage. So it works like seal of corruption.
When it procs it can potentially crit for up to 20-35k with wings up as just 1 dot tick. So if they stack 30~% crit that gives 50% when wings are popped making a hard cap. So they are bypassing stacking mastery with the first tier ability that increases flat holy damage. Every other second they are probably duel critting for 200k or more.

My DPS sims about 10k lower when I use masterful/mastery procs on 6 pieces versus rank 5 TD. Everyone seems to say use masterful/severe/mastery proc corruptions. If they're much better than TD, is real world DPS different to sims?
In your opener, you built to 5 HP before Wings; the standard go using Crusade is to Blade, Judge, Wings, TV, Wake, TV, and so on. You're also one of many people I see using Unbridled Fury potion for some reason. Did that potion get buffed, or is it because it's cheaper?

Not sure who "everyone" is, but go by what the sim tells you. If TD outperforms the others, use it!
Sims are nice but oftentimes people use Patchwerk for ST when reality is that most ST fights require some movement; I'd use Light Movement instead of Patchwerk. You'll see the sim DPS go down quite a bit doing that, but it's likely more of a "real world" test than the target dummy test that is Patchwerk.
This isn't really a Fix my DPS post, as my DPS is fine and I'm not lagging behind massively anywhere.
It's more a confusion on my end about the spec, been playing since Wrath on and off and trying to get back into it these days doing mythic+
I've been using online guides and sims to help me in terms of going for gear, essences, etc etc
However I can't seem to get my head around the stat weights and what choices to make, as according to any sim I do, the moment I swap gear the weights completely change. Then some essences that are supposed to be good (memory of lucid dreams minor) end up being a dps loss for me. I think I'm just confused, if theres a great online resource beyond the usual places people could point out that would be great.
There's no difference between me sitting on a training dummy and what the sim says I should be doing so it's more just me wanting to make sure I'm doing the best I can.
My character is Reunion on EU Karazhan (sorry can't post links yet)

The general Ret advice is to equip whatever sims highest, and ignore stat weights.
If you're wanting a "best" stat right now, many Rets are stacking Mastery and Mastery % corruptions for big DPS numbers, which are reliable boosts compared to the RNG factor of Twilight Devastation and Infinite Star.

I’m currently running a zeal, Fires, Seraphim, Sanctified and I’m getting great dps with great mid fight burst. It doesn’t feel clunky as my old Templars Verdict, Fires, Divine Purpose, Final Reckoning build.
What’s your current build and has it brought you and dps success?
Keep on mind that the regular 5m patchwerk sim assumes perfect play with 100% uptime.
It is not a realistic value you can expect to hit in a boss fight where you have to deal with mechanics and transitions.
If you have the simulation craft addon and visit the raidbots website, you can make all sorts of sims with combinations of gear and talents.
