Best use of my time as tank

Quick question about tanking :

will it be possible to tank and be efficient while only running M+?

I want to play wow as prot pally, and i've recently become a dad.
So i only have 1 or 2 hours of playtime every day or so.

Is it enough to play and tank Keys is M+ and be correctly stuffed ?

I know i won't have time at all to raid, for sure.

Are the set gems mandatory?

Dungeons have more than adequate gear/items to use instead of raid pieces. There's some items like trinkets for specific classes that are bis from dungeon. You won't be able to become part of a top tier key group if that's what you're after with that little of play time but, you can definitely pug and do just fine. The gems are already being phased out so no need to worry really. You can do LFR and get the gems if you really want them. The 9.2 patch has a tier set in which the gems are of no use and it's this late in the expansion I wouldn't really worry too much about everything.

The set gems are absolutely not mandatory don't worry. If you are looking to do m+ keys up to maybe 18-20, the gems are not requred at all. You can with ilvl 245-250 ish gear and a coordinated group easily come up in that range. You can check out my pala tank "Diamondkitty - Magtheridon EU". I have not set foot inside the raid, and i'm doing just fine, but i also have a bit more than 1-2 hrs playtime a day to play.

1-2 hrs a day is plenty. You can do lots of M+ and you can even fit a full HC raid in 2 hrs if the guild is good. But I would say that for gearing M+ is best.

What are your goals? If you want to be doing the absolute maximum you can do, pushing to +20 and beyond then you'll start to struggle without Dom Shards eventually. If you're just intending to get +15s across the board and aim for Keystone Master then that's perfectly doable. I had a friend do exactly the same thing on the same class.
As a side note, in 9.2 there is a system in place for M+ players to obtain tier gear eventually, so while you will be behind a raider who also does a lot of M+, you will be able to get your set bonus eventually.

1-2 hours per day is more than enough to do M+ at a very high level.
In my guild we have several groups that play a couple of hours twice per week and they are pushing very high keys. They don't touch raids at all.
And tanks are always popular, so you will have no problems at all if you are gonna play as a free agent and pug your groups.

You'll do fine with this little playtime. However you do have to keep in mind that as a tank you'll be expected to know the in and outs of all dungeons, so you'll have to spend extra time researching routes and whatnot.

It is enough as long as you spend additional time watching guides for m+
