JC/Enchanting here.
Playing the AH with this combo is more fun than PvE.
Jewelcrafting / Enchanting here too. While i do have an alt that mines i seldom go farming, maybe once a month for about an hour or so, however i leveled both professions without using the alt, just using the AH properly and de-ing drops.
Alch/Enchanting on my Druid since BC.
Next highest professions on that server are 98 Mining and 73 Herbalism.
Sitting on about 116k gold right now :P

JC + Alc on main, an alt with herb/mining and another alt with enchanting for DE.
JC+Engi and alt has mining+enchanting to support
Had Alchemy/Herbalism up until late Wrath when i switched to Alch/Engi using AH to buy mats.

Used to be Alchemy/Herbalism until August 2010, but finally realised that my time is way too valuable to fly around picking herbs. Making a not spectacular but steady profit with these two by just buying mats from the AH.
I only play this character, but none of my (currently shelved) alts have gathering professions either.
I guess it could count as crafting + gathering, but my Pally (my only 80+ horde-side) has Tailoring & Enchanting.
JC/BS, no mining alt. I really need one..

I have an enchanter / JC and another enchanter / JC. I never found it difficult to level either although the ability to disenchant the stuff I craft helps.

tailoring+enchanting glad I had tailoring to support enchanting for a part of it.
Tailor/engi on my main. Tailoring makes money and engi eats it.
Alch/JC here. Alch is just a joke to level, so that wasn't really a hard one. JC took a bit of resources though.
I usually level my characters with 2 gathering professions to sell for money or stockpile for later if ill need them. When i hit max level ill change them to 2 crafting professions and use the gathered stuff to fund the leveling of the crafting professions.

Jewelcrafting & Alchemy (Transmution)
Enchanting & Alchemy (Elixir)
Two other Characters have a Gathering Profession which fits their Crafting Profession (LW & Skinning / Inscription & Herbalism), my Bankalt only has Enchanting and my Shaman has two Gathering Professions.
The only Profession I'm missing is Blacksmithing.
